We need Decentralized Exchanges ?

of course we need more decentralized exchanges but there are a lot limitations like you can trade only tokens that run in that blockchain (for example you can trade ETH with his tokens, but you can't trade BTC to ETH because are 2 different blockchain).

the volume is also very low so it's very hard for dex exchanges to compete with centralized exchanges

Personally, I need to use decentralized exchanges because I prefer it than those centralized one. The reason is the anonymity, I just do not want myself to give my personal information on different people that I do not really know much.

There are a few of decentralized exchanges already out there. But it's not as popular as the centralized ones. In decentralized exchanges are more safe because of your could use your personal wallet in there. Because there is no need for a third party to hold your funds. So the risk is yours to bear.
