its beacuse there are many exchanges and every exchange works on its own network so people buy and sell at an specific price but doesnt mean that this price will be the same as other exchanges, maybe there is no big difference but because traders works on different exchanges, so you wont buy bitcoin at 11500 if you can buy at other exchange at 11300, so the difference will be there but there are some sites like coinmarketcap where you can see a summary of many cryptos and exchanges, and the same site gives you a price so i think this is the better way.
