Because crypto right now is not as popular and expensive as it will be in next 5-10 years. It is very new thing that people need time to start appreciating. When shops will start accepting it as money, and it will become more popular, it will be possible to sell it for very high price, or buy expensive thing using it.

Its a personal choice to either hold or sell your coins, some people store up their coins to sell later when the price has gone up OE when the amount has grown large enough, while others sell every little coins they get.
